You can activate your iPod disk mode in iTunes summary tab and iPod touch will not be recognized as a camera.

If you use iPod nano, you can mark on using your device as a removable device. But as the iPod Touch, your computer can recognize your touch as a digital camera. You can not change it. If you need the folder of songs, you need to access a tool, like iFunBox, but you should know that the file contains your songs.
