I don’t believe you can downgrade your firmware, but since you’re on a iPhone 3G, you can jailbreak 3.1.3. You have to use redsn0w, but point it to the 3.1.2. iPhone 3G firmware .IPSW file.

Well duh… Restoring removes everything as if it was just purchased. Plus, iTunes tells you that everything will be erased before you even start the restore.

There are jailbreaks for 3.1.3, but unless you’re already jailbroken, then there’s absolutely no reason to update to 3.1.3

I’m on my third one too (first couple had VERY poor battery life and hardware issues).
The worst case scenario is that you’ll have to restore to factory settings, which won’t take more than 15 minutes.

I have an iPhone OG and, of course, it is out of warranty already.
So is there any reason to NOT jailbreak it?
Because if my phone was to somehow break, Apple would no longer fix it anyway, correct?
I’m just not sure if I should jail break it or not, if you could give me some advice I would really appreciate it!

Hells yes. Jailbreaking is always worth it. You just have to make sure that you never reboot your device unless you want to rejailbreak, which isn’t really a big deal, unless you aren’t near a computer.

No… That’s just the way it is for those devices. Nobody has created an untethered jailbreak yet.
